Umami (the fifth taste), 2014

Taking its name from Japanese, umami is a pleasant

savoury taste. As the taste of umami itself is subtle and

blends well with other tastes to expand and round out favors,

most people don’t recognize umami when they encounter

it, but it plays an important role making food taste

delicious. The assignment was to make a film that

shows the experience and sensation of umami.

Together with my classmate Kimberly De Cock, we

decided to focus on the taste in cheese. Cheese

consists the biggest glutamate content. We went

filming with the best cheesemakers in Belgium,

Van Tricht (Antwerp).
